Beijing roast duck


Coast duck was a special food in Beijing. It was initially introduced to Royal court in 1330. Now Beijing roast duck is famous around the world.
The duck that is chosen belong to force feed duck. After cleaned skin and inside, the duck is full of air between skin and meat in order to separate them. Brush maltose liquor in the skin and pour hot water inside of duck before roasting it. It takes 40 minutes to roast it, and then a delicious Beijing roast duck comes out.
The whole process of eating a roast duck is cultured. A 5 liters duck is supported to be cut into 108 pieces, and there is not only in right number but also strict rules about time and shape that is any slip must have meat and skin, and the entire duck has to be finished in 5 minutes to keep the temperature warm. A person uses a thin pancake to roll up pieces of roast duck and green onion.
In Edmonton, there are two restaurants that offer roast duck, BeijingBeijing Restaurant (700, 3803 Calgary Trail Edmonton) and Golden Rice Bowl Chinese Restaurant (5365 Gateway Boulevard NW Edmonton).

  1. My previous employers were from Hong Kong. Every year for Christmas, they would take us out for dinner to the Golden Rice Bowl. They would order traditional chinese dishes for us to try. One of the special dishes was Peking duck. It was absolutely amazing! Is Peking duck the same as Roast duck? If not, what are the differences? Is this dish somewhat of a delicacy?

  2. My husband Scott and I watch the food network every Sunday and on one Sunday in particular there was special on Peking Duck. How it was made, what were some of the best places in Beijing to patron to get the best Peking Duck.

    We watched the very process that Roxanne mentions in here. The adding of air between the skin and meat and how they bast the duck. and how it is served to patrons in the restaurants was very facinating. The experience and presentation of the food was just as important as the duck itself.

    Scott and I have eaten at the Golden Rice Bowl often for Dim Sum, however have not had the Peking Duck. We will have to go soon and try it.

  3. Peking duck is also named Beijing duck because Beijing use to translate to Peking. Roast duct is a normal name. In China, every city has their roast duct, but beijing duck is the most popular and famous.

  4. Usually, we eat a duck in three ways, so there will be three dishes. One is the skin and a little bit meat of duct which is eaten in the way that I mentioned above. Another one is the meat that is used to fry. The soup of duck bone is also very delicious.

  5. Roxanne, I enjoyed reading your recipes of Chinese cuisine, especially Beijing roast duck. I think this dish is well known in every country including Russia, but how to prepare the duck so it becomes a real Beijing roast duck is another question. Because I am not a good cook, I prefer to go to the restaurants to try something special or to my friends :-)
